Sneaky Veg Omelette with Microgreens
Ingredients:
- 2 eggs
- 1 tbsp finely chopped onion
- Salt (as required)
- 1 small handful of Zoe Organics microgreens (finely chopped)
- A little oil or butter
How to make:
- Beat the eggs with salt and onion.
- Finely chop the microgreens and mix them in.
- Cook like a regular omelette on a pan.
- Serve with bread or dosa.
Chop the microgreens very fine — kids won’t even notice, but they’ll still get the goodness.
